Kabuli Pulao Recipe - A Flavorful Indian Dish

Ingredients

Servings:
6
  • 2 cups Basmati rice
  • 1 lb Lamb or chicken (cut into pieces)
  • 1 cup Carrots (julienned)
  • 1 cup Raisins
  • 1 large Onion (finely chopped)
  • 4 cloves Garlic (minced)
  • 2 tbsp Ginger (grated)
  • 1 tsp Cumin seeds
  • 1 tsp Cardamom pods
  • 1 tsp Cinnamon powder
  • 1 tsp Salt (to taste)
  • 1 tsp Black pepper (freshly ground)
  • 3 cups Water
  • 2 tbsp Ghee or oil
  • 1 cup Fresh coriander (chopped for garnish)
  • 1 cup Almonds (sliced, for garnish)

Instructions

6 steps

  1. Prepare the Rice

Rinse the basmati rice under cold water until the water runs clear. Soak for 30 minutes, then drain.

Soaking helps to achieve fluffy rice.
  2. Cook the Meat

In a large pot, heat ghee or oil over medium heat. Add chopped onions and sauté until golden brown. Add garlic, ginger, cumin, cardamom, and cinnamon, and cook for 2-3 minutes.

Stir frequently to avoid burning the spices.
  3. Add Lamb or Chicken

Add meat to the pot, season with salt and black pepper, and cook until browned on all sides.

Ensure the meat is well-seared for better flavor.
  4. Combine Rice and Water

Add the soaked rice and water to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender and water is absorbed.

Do not lift the lid during cooking.
  5. Add Carrots and Raisins

In the last 5 minutes of cooking, add the julienned carrots and raisins on top of the rice without stirring. Cover again.

This allows the carrots to steam and soften.
  6. Fluff and Serve

Once cooked, fluff the rice gently with a fork. Garnish with fresh coriander and sliced almonds before serving.

Serve warm for the best flavor.
